Knob Creek 12 year old Straight Bourbon, originally released in 2019 as a limited edition bottling, has now become a regular offering from Jim Beam Distillery since 2020. This small batch bourbon whiskey is crafted using a mash bill consisting of 77% corn, 13% rye, and 10% malted barley, and is aged for a minimum of 12 years in select oak barrels to reach a barrel strength of 100-proof. Its perfectly aged aroma showcases warm oak and vanilla notes combined with layers of caramel, pastry and cream. On the palate, Knob Creek 12 Year offers flavors of aged oak, leather, and sweet vanilla marshmallow with a hint of crushed white pepper.
