George A. Dickel, a Nashville merchant born 40 years after the signing of the Declaration of Independence, ventured into the whisky industry and built a reputation for selling the smoothest and most mellow spirits in the region. In 1878, he purchased a large share of the Cascade Hollow Distillery in Coffee County, which led to the establishment of Geo. A. Dickel & Co. George Dickel followed the Scottish tradition of spelling whisky without an "e" and preferred whisky produced during winter months due to its smoother taste. The company advertised their Geo. A. Dickel's Cascade Tennessee Whisky as "Mellow as Moonlight" and to this day, the whisky undergoes the Lincoln County Process - a charcoal-mellow filtration - to enhance its flavor. Although Prohibition was enacted in Tennessee nine years prior to federal law in 1919, Cascade Whisky was allowed to be sold as a medicinal spirit through leased equipment at the Stitzel-Weller distillery in Kentucky. Twenty-five years after the Repeal of Prohibition, a new distillery was opened down the road from the original Cascade Hollow Distillery, producing whisky known as Geo. A. Dickel Tennessee Whisky. In 1964, the whisky was bottled and released as Dickel Black Label Old No. 8 and Dickel Tan Label Superior No. 12. Today, the brand remains a symbol of quality and excellence, continuing the tradition established by George A. Dickel over 130 years ago.
