Mezonte Michoacan originates from Rio de Parras, Querendaro, Michoacan, and is crafted using maguey Alto (agave Inaequidens). To cook the agave, a shallow brick oven is utilized to avoid hitting water while digging too deep. The fermentation process takes place in brick vessels with roughly 6 liters of pulque, and distillation occurs using a hollowed-out tree trunk with a copper top. The skilled master distiller, Jorge Perez, oversees the entire production process. The inaugural batch of Mezonte Michoacan exported to the US was crafted in 2018 and yielded a mere 285 liters.
