Aviation American Gin is a product of the partnership between distiller Christian Krogstad and bartender Ryan Magarian, and was first produced in Portland, Oregon in 2006. The American dry gin, distributed in 16 countries including the US, Canada, Spain, UK, Ireland, France, Russia, Italy, Germany, Holland, and Australia, is known for its distinctive, less juniper-forward flavor profile. The founders experimented with over 30 different recipes before settling on the one that is currently produced. They named the gin after the pre-Prohibition cocktail, The Aviation, which was created by bartender Hugo Ensslin in the early 1900s. The special gin was originally bottled in a blue-labeled wine bottle, but the current flask-shaped bottle with a black label and silver cap was inspired by the Art Deco period.

The recipe ratio for the gin remains a secret, but it is known to be made with seven natural botanicals including juniper, lavender, sweet and bitter orange peel, cardamom, coriander, Indian sarsaparilla, and anise seed. The small batch gin is twice pot-distilled and bottled at 42% ABV, with the botanicals steeped in grain spirit for 48 hours before redistillation in a custom-built 400-gallon pot still. The distillery uses deionized Cascade mountain water to bring the spirit to proof before bottling. The Master Distiller, Christian Krogstad, credits Aviation's natural ingredients and low reflux stills for its bright flavor, which has a smooth juniper base and a subtle, clean finish.
