The Dingle Distillery’s fifth batch of its single malt Irish whiskey has arrived, and its bursting to the brim with big flavours. This expression was matured in a mixture of casks: PX casks, Madeira wine casks, and ex-bourbon casks. The resulting expression is, as you could have guessed, jam-packed with winey, spicy flavours. Free from chill filtration and artificial colouring, this is a big whisky from a relatively new distillery, clearly eager to make its mark.
The nose is aromatic, with a bit hit of dried fruit followed by an assortment of festive spices, such as nutmeg, ginger, and cinnamon. The palate is nutty and malty, with red berries, vanilla, and a certain oaky spice developing. The finish is chocolatey, with hints of oaty biscuits followed by a particular cedar spiciness. Divine.
